Slow Cooker Instructions:
1. Prepare the Apples:
Core each apple, leaving about 1.5cm (1/2 inch) at the bottom intact to hold the filling.
Use a paring knife to slightly widen the opening if needed.
2. Make the Filling:
In a small bowl, mix together the brown sugar, butter, cinnamon, nutmeg, walnuts (if using), and raisins (if using) until well combined.
3. Stuff the Apples:
Fill each apple cavity with the filling mixture, packing it in tightly.
4. Add Liquid to the Slow Cooker:
Pour the apple cider (or water) and lemon juice into the bottom of the slow cooker.
5. Cook:
Place the stuffed apples into the slow cooker, ensuring they are upright.
Cover and cook on LOW for 4–6 hours, or until the apples are tender but still hold their shape.
6. Serve:
Carefully remove the apples and spoon some of the cooking liquid over the top.
Serve warm with vanilla ice cream, if desired.
Cooking By Oven Instructions:
1. Preheat the Oven:
Preheat your oven to 180°C (160°C fan) / Gas Mark 4.
2. Prepare the Apples:
Follow the same steps to core and prepare the apples as above.
3. Make the Filling:
Mix the filling ingredients as described above.
4. Stuff the Apples:
Fill the apple cavities with the filling mixture.
5. Arrange in a Baking Dish:
Place the stuffed apples in a baking dish.
Pour the apple cider (or water) and lemon juice into the dish, ensuring there is enough liquid to come about 1cm up the sides of the apples.
6. Bake:
Cover the dish with foil and bake for 30 minutes.
Remove the foil and bake for an additional 15–30 minutes, or until the apples are tender and the filling is bubbling.
7. Serve:
Spoon the liquid from the bottom of the dish over the apples before serving.
Serve warm with vanilla ice cream, if desired.
Cooking Tips:
Choose apples of similar size for even cooking
Don’t skip peeling the top third of the apple – this allows the skin to stay intact while cooking but makes eating easier
If your apples are floating, place a heat-safe plate on top to keep them upright
For extra flavor, baste the apples with cooking liquid halfway through cooking
The cooking time may vary depending on the size and variety of apples used
Serve warm with vanilla ice cream and a drizzle of the cooking liquid
Store leftovers in an airtight container in the refrigerator for up to 3 days
Optional Variations:
Replace brown sugar with maple syrup or honey
Add 1/4 teaspoon of ginger or allspice to the filling
Use dried cranberries instead of raisins
Top with granola before serving for added crunch
Nutritional Note:
This dessert provides fiber from the apples and can be made healthier by reducing the amount of sugar or using natural sweeteners.
