Ingredients:

4-6 chicken breasts (boneless, skinless)
240ml balsamic vinegar
120ml chicken stock
50g brown sugar
3 garlic cloves, minced
1 tablespoon Italian seasoning
1 tablespoon Dijon mustard
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons cornflour
2 tablespoons water

Slow Cooker Method

1. Prepare the Sauce
In a bowl, mix together the balsamic vinegar, chicken stock, brown sugar, minced garlic, Italian seasoning, Dijon mustard, salt, and black pepper.

2. Add to the Slow Cooker
Place the chicken breasts in the slow cooker and pour the prepared sauce over them.

3. Cook
Cook on low heat for 6-8 hours, or on high heat for 3-4 hours, until the chicken is tender and fully cooked (internal temperature should reach 75°C).

4. Thicken the Sauce
Once the chicken is cooked, transfer the chicken to a plate and cover to keep warm.
In a small bowl, mix the cornflour with water to create a slurry. Stir the slurry into the sauce in the slow cooker.
Cover and cook on high for 5-10 minutes, or until the sauce thickens.
