Ingredients:

115g unsalted butter, softened
100g light brown sugar
50g caster sugar
1 medium egg
1 teaspoon vanilla extract
175g plain flour
½ teaspoon bicarbonate of soda
¼ teaspoon salt

Instructions:

1. Prepare the Cookie Dough:
1. In a large mixing bowl, cream together the butter, light brown sugar, and caster sugar until light and fluffy.
2. Add the egg and vanilla extract, then mix until well combined.
3. In a separate bowl, whisk together the plain flour, bicarbonate of soda, and salt.
4. Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
