Air Fryer Quinoa and Black Bean Burgers

Ingredients:
100g quinoa, uncooked (or 250g cooked)
1 tablespoon olive oil
1 small onion, finely diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon ground coriander
1 x 400g tin black beans, drained and rinsed
50g breadcrumbs (or oat flour for a gluten-free option)
1 tablespoon soy sauce
1 teaspoon Worcestershire sauce (vegetarian version if needed)
1 tablespoon tomato purée
1 egg (or flax egg for a vegan option: 1 tablespoon ground flaxseed + 3 tablespoons water)
Salt and pepper to taste

Recipe:
1. Cook the Quinoa:
1. Rinse the quinoa under cold water.
2. In a saucepan, combine the quinoa with 200ml water and bring to a boil.
3. Reduce the heat, cover, and simmer for 12-15 minutes, or until the quinoa is fluffy and the water is absorbed. Let it cool.
2. Prepare the Burger Mixture:
1. Heat 1 tablespoon olive oil in a pan over medium heat. Add the onion and cook for 2-3 minutes until soft.
2. Stir in the garlic, cumin, smoked paprika, and coriander, cooking for another minute until fragrant. Remove from heat.

1. Preheat the air fryer to 190°C (375°F).
2. Lightly spray the air fryer basket with cooking spray or brush with oil.
3. Place the patties in a single layer in the basket, ensuring they don’t touch.
